As the populations increases, we have access to fewer resources. Therefore, we must reduce our environmental footprint when we enjoy a meal. It is easier than ever to prepare dishes which are environmentally friendly. This can be done by using organic, seasonal, local and free-range ingredients. We want to make it easy for you to care for the environment - even when you eat.
Why Buy and Eat Organic?
Eco and organic foods are produced without pesticides. Ecology is also your guarantee against genetically modified products. Eco and organic production result in cleaner groundwater and a more diverse nature. Why should you buy seasonal products? Fruits and vegetables purchased outside their natural season is often grown in heated greenhouses, is kept in storage and transported over a longer distance. This produces a greater environmental impact.
Why Buy Local?
Transportation of goods over long distances increases the food carbon footprint. Danish produce and local fruits and vegetables travel a shorter distance so the transport time from the farm to the fork is significantly shorter.
Why Reduce Food Waste?
Reducing food waste is cost effective and benefits the environment. Studies show that 540,000 tons of edible food is thrown out in Denmark each year, and food waste costs Danish consumers 16 billion Danish kroner annually. Food waste in Danish canteens, cafeterias, hotels, cafes, restaurants and catering companies total 94,000 tonnes per year, which is equivalent to 419 million Danish kroner.
Danish residents now convert food waste to a useful resource - energy production from biogas.
Why do we save on bottled spring water?
A lot of water has been used for the production of bottles and in the filtration of mineral water, where it is estimated that two liters of water is wasted for each liter, is filtered. Buying bottled water uses 1500 times more energy to produce, as an equal amount from the tap and every year is about 1.5 million tons of plastic is used for the production of water bottles for the global market. In addition, more than 80 percent of PET water bottles thrown in the trash instead of being recycled or end up in the wild.

We buy organic products
It is a benefit for the environment to buy organic food. Organic food is produced without pesticides. Organic food is also your guarantee against genetically modified food and feed. And then organic production gives both cleaner groundwater and a more diverse nature.
As a Green Key hotel, we make an effort to protect the environment which includes buying organic products. As a Green Key business at least 5% of our purchased food must be organic. From 2014, it is a minimum of 7.5% of the total purchases which should be organic and from 2016 10%.

We save food waste - not on your experience
The environmental benefits of reducing food waste. Food waste costs the Danes 16 billion crowns each year and estimated 303,000 tons of edible food is discarded in the food sector each year.
As a Green Key business we make an effort to reduce food waste in the procurement, preparation, serving and finishing. This way you automatically save energy, water, raw materials and transportation without compromising your experience and taste. Enjoy our food - but do not take too much if you cannot eat it.
We save water bottles – not on drinking water
Tests show that it tastes better, is cheaper and less harmful to drink tap water rather than bottled water. Environmentally, it is also clearly the best choice. Bottled water uses 1500 times more energy in production compared to an equal amount from the tap. Therefore we use cold tap water instead of bottled water. This way you automatically save energy, plastics and water without sacrificing your experience and taste. Therefore you should choose tap water instead of bottled mineral water, whenever possible.
